Organic Shrank Italian small spelt

Also called farro, or starch, this small spelt (triticum dicoccum) is grown mainly in Italy and cannot be crossed (hybridized) with wheat. The gluten it contains is therefore spelt gluten and not wheat gluten.
The small Shrank spelt we sell is completely organic.
Thanks to its starch content, it is ideal for pasta.
